Using oil in your carrot cake also helps to ensure that it will be moist. A lot of carrot cakes that use milk and butter tend to dry out more easily.

Carrot cake is pretty much one of my favorite desserts, made better by the addition of cream cheese frosting. I like the idea of the ginger in the cake and cinnamon in the frosting - zesty combo!

What an interesting post. I like to use canola oil in some baked goods too, especially when I don't want an obvious butter flavor. And that glass is adorable!
