Sesame Chicken Salad

Ingredients:
2 cubed poached chicken breasts or about 2 cups leftover roasted chicken
3 tablespoons mayonnaise
1/2 teaspoon sesame oil
1 1/2 teaspoon toasted sesame seeds
1 stalk celery, diced
1/2 cup diced snow peas
1 small bunch green onions, sliced
salt
white pepper
2 cubed poached chicken breasts or about 2 cups leftover roasted chicken
3 tablespoons mayonnaise
1/2 teaspoon sesame oil
1 1/2 teaspoon toasted sesame seeds
1 stalk celery, diced
1/2 cup diced snow peas
1 small bunch green onions, sliced
salt
white pepper
Directions:
In a small bowl, stir together the mayo, sesame seeds and the sesame oil. Set aside. In a large bowl, mix together the chicken, salt, white pepper, snow peas, celery, and green onions. Stir in the mayonnaise and make sure all ingredients are evenly distributed.
My thoughts:
Chicken salad is a classic way to use up leftover chicken but it can be a little boring. I've been utterly obsessed with sesame and sesame seeds lately and thought they might be just the thing to perk up my salad. And they were, they transform a simple dish to something totally company worthy. And don't forget the snow peas! They add a great little crunch and burst of freshness.

Sounds wonderful! I love sesame seeds too. I think black sesame seeds might look interesting in this too.
Can I have some?
I've been drooling for days just looking at your chicken salad photo. I think Phase 1 of South Beach Diet does that to me... :D
I made these today, and OMG, it is SOOOOOO full of flavor!!! I didn't have celery, so I just used what I have - some green snaps and toasted black sesame seeds and of course a few dashes of sesame oil.
Thank you so much for sharing this recipe! :) I'll definitely be making this again.
As a fan of all (most - to be honest) things chicken salad, this is one for the go-to recipe arsenal! Thanks!

It must be the season for chicken salad. I love chicken salad but it can be a little boring if you don't spice it up a little. You're looks great! Take a look at mine when you get a chance: http://foodisyummy42.blogspot.com/2008/04/curried-chicken-salad.html
This looks really really good. :)
I have tagged you...I hope you do not mind.
I'm regretting that the last of our roast chicken went into chicken enchiladas not 20 minutes ago. If I'd seen this post first I would have held out a little chicken to make this. Too bad, because this looks like a perfect lunch.
Looks good Rachel! Love the sesame and pea pods. It's funny how we get on to something and have to try it numerous ways. I am on a buttermilk thing.
