Key Lime Cream Cheese Frosting

Ingredients:
4 oz cream cheese, at room temperature
1 1/2 cups confectioners' sugar
1 tablespoon key lime juice
food coloring, optional
Directions:
In a large bowl, beat together all ingredients until well blended. Frost on cooled cupcakes or cake.
Yield:
icing for about 12 cupcakes or a single layer cake.

I love your blog - I check it every time I'm at work and have almost filled a booklet with things to try from here. One question, though - do you have any suggestions for picky eaters that don't love cream cheese? I can't wait to make a key lime icing, but my boyfriend and I aren't big fans of cream cheese, so I'm hoping there's an alternative. Thanks!!

Kristen: Thanks for the compliment! If I didn't like cream cheese I'd make a basic butter cream and replace any vanilla with key lime juice.
I'm a huge fan of key lime. This is going on my "must try" list. Very creative!
Wow, I'm jealous! When I lived in Baltimore, I was a student at UMBC and had no way to get to a grocery store. Now, living in Iowa, you definitely cannot find Key limes in the grocery store. I've been to Key West four or five times (have family there) so they only time I get key limes is on those few-and-far-between vacations.
would this be good on a fruit pizza?
