No Bake Peanut Butter Oatmeal Cookies


Ingredients:
2 cups granulated sugar
1/4 cup butter
1/2 cup milk
3 cups old fashioned oatmeal
3/4 cup smooth peanut butter*
1 teaspoon vanilla

Directions:
Bring sugar, butter, and milk to a full boil, remove from heat, add oatmeal. Stir. Then add vanilla and peanut butter. Stir. Drop by teaspoonfuls on to waxed paper. When cool, pack in single layer in Tupperware or other air-tight container to store.




*I used Peanut Butter & Co Smooth Operator.






My thoughts:
These are not the most attractive cookies I've ever made but they are tasty. They are my favorite kind of peanut butter cookie and actually one of the very few forms I actually consume peanut butter in. My Aunt A used to make these when I was little, and since she was my great aunt I bet she made them for my mom when she was a child as well. Since they have zero baking time they come together really quickly. They are a great "first cookie" for kids to make as the dough is barely warm when you scoop them on the the waxed paper.

I have made these before with my Grandma and they are delicious along with being one of my first fon memories of cooking with Grandma in her kitchen! Thank you for sharing because the pictures sure brought back some great memories =D

Thank you! These are delicious. We made them after school yesterday as part of an activity for our Brownie troop...the girls voted to add chocolate chips, which were a fun touch :-)

Sooo good!!! I ate as much as I dropped! I substituted vanilla almond milk and the cooled cookies are really soft and sticky. I can barely pick them up. Hummmm. Any pointers for next time?

Jodie: It must be the almond milk..I've never had that happen with regular milk. Is it sweetened? The cookies really aren't supposed to be sticky.

My grandson said just the other day "Grandma, you're cooking all the time, but you've never made me any cookies".

We made these this morning along with a cooking lesson for a seven year old. And we started by making our own peanut butter in the food processor!

These look really good! I've never tried a no-bake cookie before, and this sounds like a good place to start. You reckon I could substitute the oatmeal with Kellogg's cornflakes?

ovenhaven: I've never thought of doing that before but I don't see how it wouldn't work. I would wonder if the size and volumn of the corn flakes might work against you though. But if you give it a try, let me know how it turns out.

Rachel~ After the cookies cooled a bit more they were fine. I guess I was too anxious!! I have made these 3 times! Tonight I made them with the almond milk again (it is sweetened so I only used 1 1/4 cup of raw sugar) 1/2 raw almond butter and 1/2 raw peanut butter. What a quick, easy and delicious treat. My students love them. Thank you for sharing!

I had forgotten about these. They used to serve them in my school lunch room. Sometimes they were chocolate rather than peanut butter, or maybe both.

Has anyone every added raisins to this recipe, or nuts? Also I'd like to add cinnamon. See any problem with that? I've been looking for a no bake peanut butter and oatmeal recipe and this looks best by far.

Anon- I don't see any problem with adding things. I'd keep add-ins at a 1/4-1/3 cup though.

I tried your recipe tonight at 10:20. By 10:30 I was done and the kitchen was clean! To answer annonymous regarding add-ins: I only had 2 cups of oatmeal, so I tossed in 1 cup of coconut and 1/2 cup of dried cranberries. I didn't find any changes in texture or anything and they taste super yummy! Thanks, Rachel! 'll definitely check out your recipes again : )

i'm an aspiring cheif and this has been one of the most fun recipes i've ever tried. i just made them 10 minutes ago and they were delicious. compliments to you an dyour aunt. i would reccomend this cookie to anyone at any level of cooking. very good :)

I just finished doing a batch for the Christmas holidays. Quick! I did substitute the peanut butter for Organic Almond butter and Organic Cashew butter and those butters worked just as easily as the peanut butter. Delicious! Thanks.

i just made these! instead of dropping them as individual cookies, i made them into bars. they aren't quite set but i licked the spoon (oops!) and they are delicious!
