Chocolate Coconut Brownies
Ingredients:
1 1/2 cup flour
1 cup applesauce
1 cup dark brown sugar
2/3 cup cocoa
1/2 cup shredded coconut
1/4 cup oil
2 teaspoons vanilla
1 teaspoon baking soda
2 teaspoons baking powder
Directions:
Preheat oven to 350. Grease and flour or spray an 8x8 inch baking dish. In a large bowl, beat together applesauce, oil, sugar and vanilla. Stir in flour, baking soda, baking powder and cocoa. Beat until well mixed then fold in coconut. Pour into prepared pan. Bake 25 minutes or until a toothpick inserted into the middle of pan comes out clean.

Chocolate and coconut - brilliant! They look supergood.
I've never tried coconut or vegan brownies before, I'm pretty in love with the Hershey's Best Brownie recipe as featured on the back of the cocoa canister. Inspired by your chocolate cupcakes, with peppermint frosting, I am planning on creating some chocolate peppermint brownies, with bits of crushed candy canes in them.
I wish I had seen this earlier. I didn't have eggs but all the other stuff. Looks good.
What a great recipe! They look so moist and I love the addition of coconut.

I've tried chocolate and coconut in cupcakes before, but never brownies. Sounds like a delicious combo!
