Fried Pork Chops

Ingredients:

4 cups vegetable oil
¼ teaspoon salt
¼ teaspoon black pepper
½ teaspoon garlic powder
4 pork chops (bone in)
1 cup buttermilk
1 cup all-purpose flour
Heat oil in a large, heavy bottomed pot to 350 degrees F.

Directions:
Sprinkle the seasonings on both sides of the pork chops, rubbing them thoroughly into the meat. In a large bowl, dip pork chops in butter milk. Roll each chop into flour, and shake off the excess. Carefully place the chops, 2 at a time, into the hot oil, and cook until golden brown. Drain on paper towels before serving.

Cream Biscuits with Dill

Ingredients:

2 cups flour
1 tablespoon baking powder
1/2 teaspoon salt
3 tablespoons minced fresh dill
1 1/4 cups heavy cream, plus additional for brushing biscuits

Directions:

Preheat the oven to 425 degrees. Into a bowl, sift together the flour, the baking powder, and the salt. Add the dill and 1 1/4 cups of the cream. Stir the mixture until it forms dough. Gather into a ball. On a lightly floured surface knead the dough gently about 6 times and pat it out 1/2 inch thick. Cut out as many biscuits with a cutter dipped in flour and invert the rounds onto a lightly greased baking sheet. Repeat as necessary. Brush with cream and arrange on cookie sheet sprayed with cooking spray. Bake until slightly brown, about 10 minutes.

Spicy Chicken Strips

Ingredients:

1 1/2 cups flour
1 ½ teaspoon paprika
1 teaspoon poultry seasoning
1/4 teaspoon cayenne pepper
1/4 teaspoon allspice
1 cup buttermilk
1- 2 lbs boneless skinless chicken breasts
Vegetable oil
Salt and pepper

Directions:

Heat 1 1/2 inches vegetable oil in a deep skillet over medium high heat. . Mix flour with paprika, poultry seasoning, cayenne, and allspice. Divide seasoned flour between 2 plates. Pour buttermilk into a shallow bowl or pie plate. Line up plates/bowls in the following order: flour, buttermilk, and then flour. Season chicken with salt and pepper. Coat chicken pieces in flour, then buttermilk, then a second coating of flour. Cook chicken about 6 minutes on each side, until deep golden brown.

Chicken Avocado Club Sandwiches

Ingredients:

4 slices sourdough bread (toasted or untoasted)
1 large avocado, sliced thinly
4 slices bacon, cooked crisp
2 boneless skinless chicken breast, thinly sliced or pounded thin

Directions:
Heat a grill pan over high heat. Add chicken and grill for about 3 minutes on each side. In a separate pan, fry bacon until just crispy. Drain bacon. Assemble sandwiches, layering chicken and bacon with avocado.
